  • Ada' Simple Feather cake

    This Has To Be One Of The Simplest But Nicest Feather Cake Mixes I've Come Across.

    Ingredients

    2 Standard eggs.
    7oz Vanilla Castor Sugar (simple recipe for Vanilla Sugar).
    8oz Self Raisin Flour.
    5oz Margarine.
    Full Fat Milk.

    Method
    Cream together the Margarine and Sugar. until Nicely blended(should be Light in Colour).Then add Your Flour .
    Add Small Amounts Of Milk Until You Have A Smooth And Soft Mixture. Pour Into An Greased 8” Round Cake Tin And Bake on Gas mark 5 /190c/375f for ½ Hour Until Golden In Colour And Center Is Firm To The Touch.

  • Ada's Coconut Macaroons

    Ingredients
    1 Large egg/3oz Caster Sugar
    (Mix these two ingredients together First)

    Ingredients part 2
    4oz Coconut
    1oz Plain flour

    Equipment

    One Medium Sized Egg Cup
    Mixing Bowl
    Balloon Whisk
    Flat Baking Tray

    Add dessicated coconut to the sugar and egg mix,Add flour and Mix well should be the consistency of wet stuffing Mix.
    Grab your egg cup and Brush the inside with warm water.
    Fill the egg cup with your macaroon mixture and pat the top insuring the mix is compacted (just like making sand castles). tip out after sufficient mix is in the egg cup.
    Then tip out onto greased flat baking tray.
    Repeat Until All The Mixture Is Gone(ensuring you wet the inside of egg cup on each filling).

    Bake On Gas Mark 5/190c/375f Until Cooked and Browned
    Add Glacier Cherry For Decoration My Children Like Chocolate Buttons, Each To His Own..

  • Nana Betty's Kentish Cake

    This recipe has followed me around since childhood and was one of the first cakes I Made at Thomas Danby ,needles to say it went down an storm.

    Ingredients
    4Oz soft margarine
    4oz soft brown sugar
    2 med sized eggs
    3oz self raising flour
    1oz dessicated Coconut
    2 desert spoons full fat milk(semi if fat conscious ha ha)
    1oz Mixed Nuts(your choice)
    1oz grated Chocolate

    METHOD

    Place all ingredients in to your bowl (EXCEPT THE CHOCOLATE) & Mix together until a smooth and light in consistency.

    Gently fold in the grated chocolate.
    Then bake in the center of the oven in an greased and lined 6” Cake Tin for 35-40minutes on gas mark 3 /160c/ 325f.
    When ready should be pale gold color and firm to touch in the centre. Empty out on to cooling rack and serve. Light and golden works wonderfully with home made custard.

  • Grandma's Easy Mixed Date loaf

    This recipe I found In 1992 and have continually used it at Xmas. Very easy to make and Tastes divine.Thank you Grandma Gladis

    Ingredients
    8oz Dates
    2oz soft margarine
    4oz caster Sugar
    1 level teaspoon of Bi-carb soda
    8 tablespoons (boiling ) water
    1 large egg(beaten)
    8oz S/r flour
    Few drops of vanilla

    Equipment
    Mixing bowl
    2lb Loaf tin
    Balloon Whisk
    Spatula.

    Method

    Cut dates up into fairly small chunks,
    grab your self a mixing bowl and Add the margarine,sugar,bi-carb soda, & Boiling water. stir the ingredients until all has melted.
    Then beat in the eggs and fold in the flour.
    Add the vanilla & Pour into an 2lb Loaf tin and bake in pre-heated oven for 3/4hr on gas mark 3 . C160. F325
